A perfect excuse for leftover chicken!
Corn or flour tortillas
Extra Virgin Olive Oil Shredded chicken
Sour cream or Cream cheese
Heat olive oil in skillet.
Lightly fry corn or flour tortillas until tender (you may wipe off any excess oil as desired).
Stuff tortillas with shredded chicken (you can use sautéed kale for a vegetarian option).
Fold in half, and place in an oven safe container.
Heat and blend La Fundidora Salsa Fresca with sour cream or cream cheese.
Pour the hot salsa mixture over the folded tortillas.
Top with plenty of shredded cheese and place in a pre-heated 350 degree oven.
Bake for a few minutes, until cheese is melted and golden.
Top with fresh onion slices.
Serve and enjoy!
