Pollo al Horno

This spice slathered grilled chicken, stained deep orange with achiote paste, pairs amazingly well with La Fundidora Salsa Fresca. Be sure to invite friends. This recipe is a crowd pleaser!

1 tbsp achiote paste
2 tbsp prepared yellow mustard
2 tbsp kosher salt
10 garlic cloves, peeled
5 dried guajillo chiles, stemmed and seeded
Juice from one lime
1 (3-4lb) whole chicken cut into 8 pieces
La Fundidora Salsa Fresca for serving

1. Combine achiote paste, mustard, salt, garlic, chiles juice, and 1 cup boiling water in a food processor, and puree until very smooth. Marinate chicken in this mixture at least 4 hours, or overnight.
2. Heat gas grill to medium-hot. Remove chicken from marinate and grill till cooked thru. Serve with La Fundidora Salsa Fresca.
